Healthy oat + banana blender crumpets
I’ve been lusting after a fancy blender for ages and finally bit the bullet and splurged on a JTC which can blend ice, which mean copious freezachinos! But this recipe doesn’t need a blender that can blend ice, just one that can handle turning oats into oat flour. I love this recipe because the batter is made in the blender and then poured directly into the pan, it’s very not messy, which I love!
Ingredients
2 medium ripe bananas (best when they have lots of brown spots)
2 eggs
1/2 cup milk, cow’s milk or almond works well too.
1 teaspoon vanilla extract
1 ½ cups old fashioned rolled oats
2 teaspoons baking powder
½ teaspoon ground cinnamon
coconut oil, for cooking
Instructions
Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up.
Lightly coat a pan with coconut oil or olive oil and place over medium heat. Once the pan is hot, add a fair dollop and cook for 2-4 minutes until they slightly puff up and you begin to see a few bubbles.
Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat.
Serve with berries and honey or anything you fancy!
